Edible bird’s nests are an expensive food item, believed to have various health benefits, but analysis of their chemical constituents remains somewhat limited. Researchers used a variety of analytical techniques, including electrophoresis, HPLC and GC, to examine the many constituents of edible bird’s nests from Malaysia.
